This sweet potato and strawberry smoothie is one of my favourite new creations. It makes a nice change from green smoothies and bananas, both of which feature in my smoothie routine regularly (and often together). The sweet potato provides a creamy texture and slight sweetness, which the strawberries enhance beautifully. Of course, it also means that you are still getting a hit of vegetable nutrition despite the lack of greens.
Much as I like the NutriBullet, you don't actually need a high powered blender for this. All of the ingredients are soft, so any blender should work, although you may want to de-hull your strawberries if you are concerned they won't be adequately blitzed. You will, of course, need to allow time to pre-cook sweet potato, but I find it easy to throw an extra potato or two in the oven if I am baking some for dinner.

1/2 cup cooked, cooled and mashed sweet potato
1 cup strawberries (I left mine whole and with stems on)
1/2 cup chilled almond milk
1/2 - 3/4 cup cold water (or more milk if preferred)
1 tsp chia seeds
Combine all ingredients in a blender, and blend until smooth.
